Vegan Stuffed Shells with Spinach Cream

Got this recipe from another blog, Bianca Zapatka. I pictured my dish looking a lot better than pictured, but hence the polar opposite. It was messy stuffing those shells! I added sauteed mushrooms to mine since the leftover spinach in the fridge wasn’t sufficient. Likewise, I emptied the container of the vegan cream cheese before it expired. Still, it was yummy.
