When you have kids it’s only natural for them to want fun foods – so you give in, within reason of course. Since my son and I are morning people, we had time to make some impromptu bluepancakes before heading out to school and work.
Whisk together all the liquid ingredients. Set aside.
In a separate bowl or stand mixer, whisk together the dry ingredients.
Add the liquids to the dry and whisk or mix in the stand till smooth.
Cook pancakes in a griddle on medium heat turning over once bubbles formed on the top.
Top with favorite fruits, vegan butter, and maple syrup.
Not quite the royal blue, but he was satisfied with the shade he wanted.
When we cooked the pancakes, we didn’t grease the griddle and it still turned out perfect. I was hesitant to get this attachment griddle when we purchased our gas range, but it’s ridiculously useful. I’ve cooked all sorts of fresh vegetables as well as vegan meats in it – super fast.
As much as I LOVE to cook, I can’t stand grocery shopping so we strategically plan for the week’s menu in advanced, make a list, order everything in the Wal-Mart grocery app, and then park to pick everything uponce a week. The only caveat with this strategy is that by Friday, we’re out of our staples and fruits, which is why we settled topping our pancakes with vegan butter and maple syrup.
The pancakes turned out awesome! They tasted so good that our son couldn’t stop talking about them to his grandparents in the evening. Will definitely make more of these in the future – perhaps in different colors.
